【Gyokuro】
Gyokuro is considered the highest-grade of green tea and was perfected in the late Edo period.
It was named "Gyokuro" because in the past, the tea leaves were shaped round like dewdrops (now they are thin and needle-like).
This Uji Gyokuro has a mild bitterness and is known for its sweet and mellow taste.
The tea leaves used for Gyokuro are covered with reed screens 20 days before harvesting to block sunlight. This cultivation method, which started in the 17th century, increases the production of theanine (an amino acid derivative abundant in tea), which brings out sweetness, and reduces catechins (tannins) that create astringency.
Covering the plants with reed screens creates a unique aroma known as "kabuseka," or covered fragrance.
【Sencha】
Sencha is a refreshing green tea with a pleasant aroma that is characteristic of Uji tea. It has a slight bitterness along with a smooth and refreshing throat sensation.
The leaves of Sencha grow under intense sunlight and are rich in health-promoting components such as catechins, which are believed to have preventive effects against cancer and various adult diseases. The interaction of catechins with other vitamins helps to mitigate the effects of caffeine.
In addition, 100g of Sencha contains 250mg of vitamin C, and the vitamins in tea are not easily destroyed by heat. It is an additive-free tea that does not use synthetic colorings.
【Fukamushi-cha】
This tea is a steamed green tea made by slightly steaming freshly picked tea leaves and then refining them with high-heat drying. It has a rich flavor and a delightful roasted aroma. The color of the tea leaves is a slightly brownish green, and the infusion has a beautiful yellow-green hue.
While green tea is generally a modest beverage compared to others, this tea stands out due to its unique production method, resulting in an impactful green tea that is popular among people of all ages.
